Below you will find a sample menu and the breakdown of our meals. As a family, we follow a whole food, plant-based diet. We seldom eat animal protein and when we do, it has to be grass-fed, antibiotic and hormone free. I do not have a set menu because the availability of seasonal food changes from week to week. | Grains: 12-15 brown rice, flax seed, strawberry mini pancakes (3 1/2" wide) sweeten with stevia |
1 oz. of nuts PLUS 1 cup of strawberries. |

1 oz. of nuts PLUS 1 peach. |
Protein: 1 cup of red beans or lentils. |
| Organic, Fair trade, shade grown Honduran coffee. (A treat from one of our trips.) | Salad: Baby lettuce salad with micro-greens, broccoli sprouts, green onion, bell peppers, tomatoes, radish, fennel and carrots. Olive oil and lemon dressing. |
