Maggie's Meal Plan

Below you will find a sample menu and the breakdown of our meals. As a family, we follow a whole food, plant-based diet. We seldom eat animal protein and when we do, it has to be grass-fed, antibiotic and hormone free. I do not have a set menu because the availability of seasonal food changes from week to week. Everything we eat is fresh from the market

I always try to:

Winter Menu
  1. Eat mostly vegetables and sprouts.
  2. Eat whole, fresh seasonal fruit.
  3. Eat organic nuts and seeds.
  4. Eat pasture eggs.
  5. Drink 8 PLUS glasses of water daily.
  6. Use common sense when it comes to portion sizes. I use the palm of my hand as a guide for animal protein portions and my clenched fist for starchy carbohydrates and fruit. Vegetables and sprouts, I eat freely.

Sample of A Spring Meal Plan

Breakfast Mid-Day Snack Lunch Afternoon Snack Dinner
Grains:
12-15 brown rice, flax seed, strawberry mini pancakes
(3 1/2" wide) sweeten with stevia
1 oz. of nuts PLUS
1 cup of strawberries.
Protein:
1 cup of black beans or adzuki beans
1 oz. of nuts PLUS
1 peach.
Protein:
1 cup of red beans or lentils.
Organic, Fair trade, shade grown Honduran coffee. (A treat from one of our trips.) Salad:
Baby lettuce salad with micro-greens, broccoli sprouts, green onion, bell peppers, tomatoes, radish, fennel and carrots. Olive oil and lemon dressing.
Salad:
Baby lettuce salad with micro-greens, kale sprouts, green onion, bell peppers, tomatoes, radish, fennel and carrots. Olive oil and lemon dressing.
Vegetables:
Saute zucchini and yellow squash with green onion, garlic and fresh oregano PLUS saute Swiss chard with lemon and garlic. Side dish of lentil sprouts.
Vegatebles:
Saute green beans with green onion, garlic and tomato, roasted almonds on top PLUS Side dish of garbanzo bean sprouts
Fruit:
Seasonal fruit or homemade strawberry popsicle (sweet strawberries stevia and water)
